simple dry rub
3 tablespoons salt
2 teaspoons oregano
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
8 pounds bone-in, skin-on, pork shoulder
2-2.5 hr to bring to room temp
9-10 hrs for 8 lbs @ 250
at 185 internal remove
leave out under foil tent for 15 min. rest
oven up to 500 place in uncovered
rotate the pork every 4-5 minutes to make it crispy
