The sports I have been most successful with are NHL, College Football & College Basketball.
Its a little easier to find a couple games where the lines on college sports have a lot of value vs Sundays in the NFL.
The most important variables that can be quantified - I look at in each sport are as follows: (intangibles/non-quantifiable variables are important too)
NFL - Offensive Line, Red Zone Efficiency, Turnover +/-, Special Teams, Close looks at Injury Reports too.
NHL - Power Play Goals Scored %, Penalties committed per game, Power Play Defense, Goalies and Goals Allowed and home/away splits for the Goalies, lastly I'm always looking a lot at how the 2nd and 3rd string lines are playing.
CBB- Offensive Rebounds is huge for me, Efficiency in Scoring, Free Throw Shooting %, Class (similar to horse racing)
CFB - Rushing Yards, Control of Game/Possessions, 3rd Down Efficiency, Which teams have serviceable place kickers, Situational Angles - Style of Offense/Matchup Exploits
